I know I know this sounds unusual. Don’t be surprised!! Eggs are one important ingredients in my daily life. In order to break the routine I wanted to come up with an unusual dish. I remember in my childhood I had once eggs with dates. So I went online and looked around for a recipe as I was curious to know the origin for this dish but failed. Some websites claimed that this dish is Kuwaiti or popular dish in the Egyptian community and other Palestinian. Dates blended & cooked with eggs as omelette results in a tasty savory & sweet dish with crazy amount of nutritious facts as they are both rich in omega 3, protein, vitamins & minerals. This dish is recommended for breakfast, brunch or in some cultures in the Middle East they prefer having it for suhoor, my favorite as well as it will make you feel full & energized.
Ingredients:

Preparation & Cooking Time: 10 min
- 3 eggs
- 2 table spoon butter or low calorie oil spray
- 4 loose dates pitted and chopped
- Saffron & cardamom for better taste if desired & salt.
Method:
- Heat the pan add some butter, in my case I used the low calorie spray oil.
- Start sautéing the dates on low heat as they might get burnt quickly.
- Beat & Mix the eggs in separate bowl and add sprinkles of saffron & cardamom for better taste.
- In another pan start cooking your eggs omelette style then add your dates from the first pan.
- Tiny sprinkles of salt and you are good to go to serve the dish warm & tasty.
- For a side it is recommended to serve this type of omelette style with arabic bread or toast if not available.
